Tartaric acid, 2, 3-dihydroxysuccinic acid, is a carboxylic acid with the formula C4H6O6. Found in a variety of plants, such as grapes and tamarind. It is also one of the main organic acids in wine.
Tartaric acid is often used in medicine, mordant and tanning agents, and is also commonly used as a reagent for separating racemic basic compounds. It is also a sour taste agent in food additives, and the acid sense is better than malic acid, lactic acid and so on. Several of its salts have important applications, such as the preparation of Fehling's reagent with potassium sodium tartrate in the laboratory for the identification of aldehyde functional groups in the structure of organic molecules. Its potassium sodium salt is also called Rochelle salt, and its crystal is polarized under pressure to produce a potential difference on the surface of the two ends (piezoelectric effect), which can be made into piezoelectric components for radio and cable radio receivers and pickups. Potassium antimony tartrate (commonly known as tartar emetic) is medically used to treat schistosomiasis.
